This tasty recipe for your summertime berries is simple to prepare and is so versatile!

Ingredients

  • ½ cup each strawberries, blueberries, raspberries and blackberries, chop into bite size pieces if needed.
  • Juice and zest of a lime
  • 1 Tbsp balsamic reduction
  • 1 Tbsp mint, chopped

Preparation

  1. Whisk lime juice, zest and balsamic reduction together.
  2. Pour over berries, add chopped mint and stir.

*I made cinnamon crisps to go with the salsa.  Simply take a whole wheat tortilla, brush with butter and sprinkle with brown sugar and cinnamon.  With a pizza cutter, cut into desired shape.  Bake at 350 for about 5-7 minutes.
