  • 1 honeydew melon, cubed
  • 1 cucumber, sliced
  • 2 Tbsp fresh mint, chopped
  • ½ cup feta, crumbled
  • 2 Tbsp olive oil
  • 1 Tbsp white wine vinegar
  • Juice and zest of 1 lime
  • 1 Tbsp honey
  • Pepper to taste


1.  Combine the melon, cucumber, mint and feta in a bowl.
2.  For the honey lime dressing, simply whisk together olive oil, vinegar, lime juice, zest, honey and pepper and pour over melon mixture.
3.  Chill and serve.
